|1/2 lb.||Aqua Star cooked and peeled shrimp, thawed|
|1||baguette, cut into 1/4" wide slices
|4 ounces||goat cheese|
|1 tsp.||fresh rosemary, chopped
|1/2 cup||watercress leaves|
|1||orange, peeled and cut into segments
(reserve any juice for vinaigrette)
|2 tsp.||olive oil|
|1 tsp.||white or champagne vinegar|
|salt and pepper to taste|
Mix goat cheese, honey and rosemary. Spread 1/2 teaspoon on each baguette slice and set aside. Toast in a preheated 400º F (200º C) oven for 3-5 minutes until crisp.
Blend olive oil, vinegar and any orange juice you might get from the orange. Season to taste with salt and pepper. Toss watercress and chopped orange segments with dressing. Spoon equally over toasted bread rounds, top with shrimp and serve.
