Shrimp Spring Rolls with Peanut Dipping Sauce

1 lb. Aqua Star cooked and peeled shrimp, thawed
1 pkg. 6-inch rice paper wrappers (24 ct.)
1 head Bibb lettuce
1 cup shredded carrot
1 cup shredded cucumber, seeded with skin on
4 ounces bean thread noodles, cooked and drained
1 cup Thai basil, finely chopped
2 tbsp. peanuts, chopped
4 ounces peanut dipping sauce


Soak wrappers in hot water, one at a time, until soft.

Arrange ingredients on lower 1/3 of wrapper, first lettuce, then vegetables noodles, shrimp and peanuts. Fold sides in and roll up.

Cut in half and serve with peanut dipping sauce.
