- 1 Shallot (finely diced)
- ¼ Cup Red Wine Vinegar
- 1 Tsp Sea Salt 
- 1 Tsp Cracked Black Pepper
- ¼ Lime (juiced)
- Mix well and let sit for a least one hour prior to service
