Oven: Preheat oven to 400°F, place skewer on a baking sheet lined with foil or parchment paper. Place sheet on middle rack and cook for 7 minutes, flip and bake on other side for 7 minutes.
Pan-Fry or BBQ: Place bacon side down on preheated pan or grill. Cook until bacon is to your desired crispness. Flip and cook the same on other bacon side. Finish on scallop side for 1-2 minutes on each side.
